City walk: About local bread and foreign roast.

Culinary background information of Salzburg Old Town.

From the Roman garum (the “ketchup” of antiquity), to oysters with Italian sea salt, to quail's eggs and to roast swan that were served at the legendary banquets of the archbishops. One doesn't immediately associate the food history of Salzburg with terms such as “regional” and "green”. The majority of the population were excluded from these exotic culinary delights and primarily consumed vegetarian, regional and seasonal foods. What we think of today as healthy and sustainable, was served less out of awareness than out of necessity. Many street names and squares in the old town remind us today of the old markets, bakeries, breweries and trading centers for all kinds of foods. 

Johannes Hofmann will walk you through Salzburg's old town and will explain using historic recipes and stories about what shopping, cooking and eating was like in a time “before supermarkets and delivery services”. The question of what one should, can and may eat has been on the minds of people from all eras. The names of many famous Salzburg denizens will come up during the tour.
